Pumpkin seeds or ‘Pepitas’ are edible seeds popular in Mexican cooking. With the hulls removed these seeds are dark green, with a delicate flavour that provides a meaty snack when roasted and salted.

Serving suggestion: Stuff giant mushrooms with sliced camembert cheese, grated Parmesan cheese, breadcrumbs, thyme, garlic and pumpkin seeds. Place in the oven at 180⁰ C for 10 minutes and grill until the cheese turns golden brown. Add course salt and pepper to taste and enjoy with a crisp, green salad.
